Crispy fried chicken
Ingredients
FIREWORKS SPICE
- 2 tablespoons kosher salt
- 2 tablespoons black pepper
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon chili powder
- 1 teaspoon dried thyme
- 1 teaspoon white pepper
- 1 teaspoon dried mustard
- ¼ teaspoon celery salt
- 1 teaspoon coriander
- Oil spray
MARINADE:
- 4 tablespoons firework spice
- 1 tablespoon hot sauce
- 2 cups buttermilk
WET DOUGH:
- 4 eggs
- ¼ cup olive oil
DRY DOUGH:
- 1.5 cups all-purpose flour
- ½ cup cornstarch
- ½ teaspoon baking powder
- 4 tablespoons spice
CHICKEN MEAT (approx. 1kg):
- 8 chicken drumsticks (option 1)
- 2 thighs with bone and skin (option 2)

- STEP 1
Mix all seasoning ingredients in a bowl. Mix 4 tablespoons of the fireworks seasoning with the buttermilk and hot sauce in a large resealable plastic bag. Once mixed, place the chicken pieces in the bag.

Marinate the chicken in the refrigerator for at least 12 hours or up to 24 hours.
- STEP 3
Prepare the wet dough by whisking the eggs and olive oil in a large bowl until fully incorporated.

Prepare the dry dough in a separate large bowl by mixing together flour, cornstarch, baking powder and 4 tablespoons of the spices.
- STEP 5
Remove a piece of chicken from the marinade, dip it into the bowl of wet batter, and allow excess wet batter to drip off.
- STEP 6
Place the dipped chicken into the bowl of dry batter, making sure the chicken is evenly coated. Gently shake off any excess flour and place on a wire rack baking sheet. Repeat the battering process for all chicken pieces.
- STEP 7
Place the chicken pieces on the crisper plate. Select the Air Fry function, set the temperature to 170℃ and the time to 20 minutes, then tap Start/Pause.
- STEP 8
After 10 minutes of cooking, remove the air fryer basket and spray the chicken evenly with oil spray. Place the basket back in the air fryer to finish cooking.
- STEP 9
When the chicken is done, take it out, let it rest for 10 minutes and then serve.
