Potato bombs in bacon coating and cheese filling
Ingredients
- 4 medium-sized rust-red potatoes
- Oil spray
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika powder
- 1 tablespoon dark brown sugar
- 1½ teaspoons kosher salt
- ¾ teaspoon black pepper, freshly ground
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon ground mustard powder
- 6 tablespoons unsalted butter, softened
- 1½ cups medium cheddar cheese, grated
- ½ cup sour cream or plain Greek yogurt for garnish
- 2 spring onions, chopped, for garnish
- ½ cup cooked bacon, chopped, for garnish
- 100g bacon slices

- STEP 1
Prick the potatoes with a fork, making holes all over the surface. Coat the potatoes with oil spray and wrap them in aluminum foil.

Place the crisper plate into the basket of the iceagle air fryer.
- STEP 3
Place the potatoes on the crisper plate.
- STEP 4
Select the roasting function, set the temperature to 200 °C and the time to 50 minutes, then tap Start/Pause.

Turn the potatoes halfway through cooking.
- STEP 6
When the potatoes are done, take them out and set them aside.
- STEP 7
Mix the spices together in a small bowl. Reserve half a tablespoon of the spices and set aside.

Mix the remaining spices with the unsalted butter and mix well.
- STEP 9
Fold back the foil from the potatoes to expose the top half. Use a knife to cut a slit down the middle, but not all the way to the bottom.

Place your palms on both ends of the potato and press inward to open the potato even further.

Use a fork to fluff the inside of the potatoes, then add a heaping tablespoon of the butter mixture and mix into the potatoes. Season with about 1 teaspoon of the reserved spices.

Top with the shredded cheddar cheese and place it back on the crisper plate in the air fryer basket, being careful not to let any pieces of foil get too close to the top heating element.

Select the grill function, set the temperature to 200 °C and the time to 5 minutes, then tap Start/Pause.

When the potatoes are ready, take them out, wrap them in bacon slices, garnish with sour cream, spring onions and bacon and then serve warm.
