Caprese chicken skewers with pesto
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- ¼ cup basil pesto
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 pint cherry tomatoes
- 8 ounces fresh mozzarella balls, drained
- 2 tablespoons balsamic glaze for drizzling

Combine the chicken cubes, pesto, salt and pepper in a large bowl and mix to combine. Cover the bowl and place in the refrigerator for 30 minutes.

Add the cherry tomatoes to the bowl and mix. Thread marinated chicken pieces and cherry tomatoes alternately onto skewers.

Place the skewers on the crisper plate.

Select the grill function, set the temperature to 200 °C and the time to 6 minutes and then press Start/Pause.

When ready, remove the skewers and then thread a fresh mozzarella ball onto the end of each skewer. Arrange the skewers on a serving platter, drizzle with balsamic glaze and serve.
