Grilled corn on the cob Mexican style

Ingredients

  • 4 ears of corn, peeled
  • 1 tablespoon neutral oil
  • ¼ cup mayonnaise
  • ¼ cup Mexican crema
  • 1 cup Cotija cheese, crumbled
  • 2 tablespoons Tajin
  • ¼ cup coriander leaves, chopped, for garnish

preparation

  • Step 1

    Clean the corn cobs and cook them in plenty of salted water until soft.

  • Step 2

    Place the crisper plate into the basket of the air fryer. Select the preheat function and tap Start/Pause.

  • Step 3

    Cover the preheated crisper plate with parchment paper, spread the cheddar on top and bake in the air fryer for about 12 minutes, until crispy.

  • Step 4

    Remove the cheese, let it cool and crumble it finely.

  • Step 5

    Lightly brush the corn with oil and then place it on the preheated crisper plate.

  • Step 6

    Select the grill function, set the temperature to 200 °C, set the time to 15 minutes and then tap Start/Pause.

  • Step 7

    Turn the corn halfway through cooking.

  • Step 8

    When the corn is done, remove the corn and let it cool for 5 minutes.

  • Step 9

    Mix mayonnaise and Mexican crema well in a bowl.

  • Step 10

    Spread the corn evenly with the mixture of mayonnaise and Mexican crema.

  • Step 11

    Sprinkle the cotija cheese and then the tajín over the corn until evenly covered.

  • Step 12

    Garnish the corn with coriander and serve.
